So ive not worked much with squid before only a handful of times. They can be quite tricky & if the ink sack bursts you’ll have a stained fish. So i will recommend getting one without the ink sack.
interesting fact –
Squid have a plastic bone shaped identical to a feather, its honestly plastic…and its transparent it strange isnt it ? .. little bit freaky i think.
But Squid has some many beneficial advantages, vitamins, minerals, omega 3. And so much more.

Squid contains 13g of protein which is 11% of your RDA, other benefits of squid include the Ink sack. Research has shown that squid ink is a top antioxidant, the smell of squid ink can be overpowering but its fine to eat.
Squid is also sustainable, its popular, its fished a lot, but is not currently at risk. Which is good for the ocean, although remember when buying seafood ask how it was caught, was it caught in a sustainable why ? And did it damage the ocean. if your fish monger or supermarket can’t tell you this information then i wouldn’t buy it
Also look out for the MSC certified logos on fish. That way you’ll know it’s from a sustainable source.
Common chinese squid are in danger and need to be protected so avoid this one, jumbo, india & japanese squid are all good varieties to use & they are sustainable.

Salsa too has some surprising health benefits.. as its mostly made of fine diced tomatoes, tomato contains 95% water meaning a tomato salsa can really hydrate our bodies, including a salsa like this into your diet will have some positive effects.
Salsa is one of the most popular condiments and is great with a lot of food, l love it with fish ..
It just so happens salsa is a nutritional powerhouse

Lime juice, onion and tomato are all a rich source of antioxidant vitamin c
What even better is that there are hundreds of different combinations of salsa you could make, each with more or less vitamins & minerals depending on what you use.
Although these rings are deep.fried normally which is unhealthy you can also shallow fry them in a pan. Less oil, less fat. You can even use a healthier alternative of your choose.
So for this simple dish you’ll need..
For the squid
-4 squid fillets, bone out and ink sack removed
– generous pinch of salt and pepper
For the lemon & tempura batter
zest of 4 lemons
-2 egg yolks
-200g plain flour
-400ml iced water
For the salsa
-5 tomatoes – washed & diced
-3 red onions – peeled & diced
-3 limes – rolled to release juice
handful of coriander chopped
handful of Mint
-3 red chills – seeds in if you want hot salsa. Chopped
Method
- Pat dry the squid filets with a Cloth, and finely slice width ways to make a ring. Keep going until all are done, you’ll have different sized rings and you move down the filet. But its fine.
- Salt and pepper the rings and leave in fridge for 20 minutes
- For the batter, place the egg yolks in the iced water and mix well, place the ice water into the flour and mix, you want this to be lumpy.
- Have another little bowl of flour to dredge the rings before placing in the batter.
- For the salsa, finely dice the tomato, onion, coriander & mint, juice the limes and mix together. Add some lime zest to add an extra kick of citrus.
- Place the rings into the batter & shallow fry for 3-4 minutes and crispy.
- Serve with the salsa centre plate and 3 rings around the salsa, add some micro herbs to enhance the colour factor & add some lemon or limes on the plate
